Cinnamon Sugar Donut Muffins

Last week at work, my co-worker decided we needed to make our very own "Call Me Maybe" video. I work at an animal shelter and we wanted to show off all our cute animals and let people know how much we love our jobs and love the animals. So we thought of the idea on Thursday and decided to film our "Adopt me Maybe" video on Friday.

We were all in a frenzy trying to get ready! So what came to my mind? Treats of course! I had to prepare a breakfast treat to make sure the day got started right! The only problem? It was 10pm the night before and I was just starting....I stumbled on this recipe and it was a hit! Easy and fun. These helped our day get off to an awesome start and it was so fun! The video turned out great and I believe these little donut muffins helped just a little bit. If you want to watch our awesome video check it out here!

The original recipe calls these donut muffins and they really are little fake donuts. The nice thing is they are baked but still give you that donut fix. I hope you make them!






Cinnamon Sugar Donut Muffins
recipe slightly adapted from Allrecipes.com

Makes around 40 mini donut muffins

Ingredients
1/2 cup white sugar
1/4 cup margarine, melted
1/4 teaspoon ground nutmeg
1/2 cup milk
1 teaspoon baking powder
1 cup all-purpose flour

Topping
1/4 cup butter, melted
1/2 cup white sugar
1 teaspoon ground cinnamon

Directions 

Preheat oven to 375 degrees. Grease 40 mini-muffin cups.

Mix 1/2 cup sugar, 1/4 cup margarine, and nutmeg in a large bowl. Stir in the milk, then mix in the baking powder and flour until just combined. Fill the prepared mini muffin cups about half full.

Bake in the preheated oven until the tops are lightly golden, around 15 minutes.

While muffins are baking, place 1/4 cup of melted margarine in a bowl. In a separate bowl, mix together 1/2 cup of sugar with the cinnamon. Remove muffins from their cups, dip each muffin in the melted butter, and roll in the sugar-cinnamon mixture. (I recommend just rolling the tops of the muffins so they aren't drowning in cinnamon sugar.) You will have leftover cinnamon sugar topping.  Let cool and serve.
